Mrs. Newman’s A”H Blintz Soufflé

When I spent my first summer in America, I stayed with a dear friend who made me a delicious meal for Erev Tisha Bav. I had never had a blintz soufflé before and it was a beginning of a love affair of her recipe. I am obsessed with it and make it for my family and clients on a regular basis.

  • 2 packs Ratner’s Blintzes (any flavor)
  • 1/4 lb. Butter
  • 4 eggs, well beaten
  • 1 1/2 cups sour cream
  • 1/4 cup sugar
  • 1/2 Teaspoon salt
  • 1 Teaspoon vanil la
  • 1 Tablespoon Orange Juice (optional)

Melt butter in 2 quart casserole and place blintzes over butter in one layer. Blend other ingredients with well beaten eggs and pour over blintzes. Bake for 45 minutes in 350 degree oven or until the tops start to brown. Serve with powdered sugar, strawberries, raspberries or sour cream.

Serving Suggestion: We suggest using Cheese Blintzes and fruit filled blintzes. When placing the blintzes in the casserole, alternate the cheese blintzes with the fruit blintzes for a unique variety!
