When you look at the typical cuisine of Barbados (our brilliant Superyacht Cruise in January 2025), most of it is based around non-kosher food. The one below is definitely 100% kosher and delicious.

Ingredients
- 4 Mahi Mahi Fillets
- 1 lime
- 1 Tbsp salt
- 1/3 cup quality oil
- Spice rub
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp turmeric
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- In a large bowl put 1 Tbsp of salt and the lime juice with the mahi mahi and fill it with enough water to just cover the fish. Let stand around a quarter of an hour.
- Remove the fish from the water and pat dry, season generously with the spice rub, add the oil and set aside.
- Heat the grill on high. Put a bit of oil on the grill and add the fish.
- Cook uncovered.
- Depending on the thickness of the fillet the cooking time will vary, for about 1″ fillet is about 3 minutes per side. You can bast it a couple of times with the oil and spices from the bottom of the bowl.
- Serve with sauce of your choice and a suitable side.
