In American Chinese Cuisine it is a stir-fried dish consisting of noodles, meat (chicken being most common but beef. or tofu sometimes being substituted), onions and celery. It is often served as a specific dish at westernized Chinese restaurants. Vegetarian or vegan chow mein is also common.

A very popular dish we will be serving on our Mekong cruise. Unfortunately, that cruise is sold out. However, we have a few cabins available on our January winter sunshine cruise in the Caribbean.
Ingredients:
- 4 lb Sliced best quality beef into strips
- Sugar ½ lb
- Soy sauce
- 16 dried Chinese mushrooms
- 2 lb Beansprouts
- 2 Cans bamboo shoots
- Cornflour
- 2 pints beef stock
- 12 spring onions
- 4 Sticks of long celery sliced into strips
- 2 small cans Water chestnuts
- 10 eggs
Instructions:
- Mix seasoning, sugar and soy sauce.
- Marinate the beef for ½ hour.
- Soak the mushrooms in war, water for 20 mins.
- (If you can’t find Chinese mushrooms, use regular mushrooms, no need to soak)
- Cut spring onions into 1 “ strips.
- Mix cornflour and stock together. Add the hot stock slowly.
- Drain beef and reserve marinade.
- Stir-fry beef.
- Cover and simmer till tender
