As promised on our last mailout, a recipe for the 9 days. If you get fed up with fish or salads try this very simple recipe.

Ingredients
- 4 medium sized onion or 4 small leeks, chopped
- 120 ml vegetable oil
- 40 ml yeast extract in ½ liter hot water (optional)
- 1 Kg chopped mixed nuts
- 8 tbsps. ground almonds
- 400g whole meal breadcrumbs
- 3 tbsps. sage
- Pinch cayenne pepper
- Salt and pepper to taste
Method
1. Pre-heat oven to 180C/350F/gas mark 4
2. Sauté the onion or leek in the oil until soft, not browned.
3. Then combine all the ingredients together; the mixture may be slightly slack.
4. Turn into an oiled ovenproof dish, lined with oiled greaseproof paper, preferably a loaf tin and bake for 30 minutes until golden brown.
